Perfect Pumpkin Desserts
My mom isn't a big fan of pumpkin, so we didn't really do pumpkin desserts growing up. Instead, I truly discovered a love of all things pumpkin when I was in college. From then to now, I've tried a lot of different pumpkin recipes, from cookies and cupcakes to a pumpkin based pasta dish (which was somewhat surprisingly very good)!
Now that we're only a few weeks from the biggest eating day of the year - and the day that really celebrates the sweetness of pumpkin - I thought I would share some of my favorite pumpkin dessert recipes.
I made these cupcakes for our Halloween party (with black sprinkles (right)), and they were a huge hit! The recipe is very easy to follow and the cupcakes are moist and delicious. The cinnamon frosting is truly the "icing on the cake."
Somehow I managed not to take a picture of these cookies when I made them for our friends-weekend at the lake last month, but let's just say, the cookies did not last long! I did make a few changes to the original recipe: 1) I only used about 1 cup of white chocolate chips (which I added to each cookie just before baking to be sure I had an even distribution); 2) I omitted the nuts; and 3) I added some additional pumpkin pie spice and threw in about a teaspoon of ground cinnamon. It's a wet batter but creates very tasty cookies!
It's been a few years since I made this Keebler pie, but it is always a family favorite. Plus, who doesn't love a no-bake pie? If you're looking for a creamy and delicious, easy holiday dessert, this is a go-to!
I haven't made this exact dip, but I love a good pumpkin dip (served with gingersnaps). This recipe sounds perfect!
